The 2m diameter pancake appeared at the Cai Rang Floating Market Cultural Tourism Festival in 2017.

Ms. Dao Thi Thanh Thuy, Deputy Director of the Department of Culture, Sports and Tourism of Can Tho, said that 14 chefs will work together to make this giant pancake (expected on April 18) and then divide it into free portions for festival attendees.

Artist Hong Nhung, the main person in charge of the performance of pouring a giant banh xeo, added that there will be difficulties while performing it, but she will try to complete a standard banh xeo of the Western region.

According to her, the standard Western-style banh xeo will be crispy at the edges, and the middle will have a lot of flour, ensuring you are "full" when eating.
