According to Associate Professor Dr. Nguyen Thi Lam, former Deputy Director of the Vietnam Institute of Nutrition, eggs left at room temperature can spoil if left outside for too long; the best way to store them is in the refrigerator. Signs of spoiled eggs include a cloudy white or yolk sticking to the shell when cracked open.
Egg surfaces contaminated with dirt (soil, chicken or duck droppings) harbor disease-causing bacteria. You need to clean them thoroughly before storage to maintain quality and avoid the risk of food poisoning due to the growth of harmful bacteria.
When storing eggs in the refrigerator, two things need to be considered: cleanliness and airtightness. Therefore, you should wash the eggs thoroughly under running water, then let them dry. Secondly, place the eggs in an airtight container and put it in the refrigerator to prevent the spread of bacteria to other foods and maintain the quality of the eggs.

Eggs are a healthy food; egg whites are fat-free and rich in minerals and nutrients such as niacin, potassium, riboflavin, and magnesium, which are good for health. Egg yolks contain less protein than egg whites, but contain most of the vitamins A, B6, B12, and D, calcium, folate, and omega-3s, providing cholesterol and essential fatty acids. Therefore, egg yolks are considered to be more nutritious.
Children can eat one egg a day, which provides a good source of choline, supporting their brain and cognitive development. Adults should eat 3-4 eggs a week.
If you have fatty liver disease or elevated liver enzymes, especially if you have moderate to severe cases, it's best to replace eggs with healthier protein sources.
