Giant sized loaves of bread
At a culinary event in Ho Chi Minh City on October 23, chefs introduced impressively sized bread loaves, weighing from 3 to 7 kg and up to a meter long. The highlight of the event was two giant sandwiches with elaborate fillings made from sea fish.

The first sandwich was filled with tuna pâté and mackerel stew, made by chef Bui Hoai Thanh, who has 34 years of experience. The other was of similar size and weight, and was filled with mackerel meatballs. Each sandwich could serve dozens of diners.
Elaborate processing procedure
It took the chefs hours to create the distinctive flavor of these giant loaves of bread. The filling alone took about 5 hours to complete.

Chef Bui Hoai Thanh said the pate filling is made from 50kg of tuna, while the main filling uses 20kg of mackerel stewed with tomatoes for 5 hours to achieve softness and absorb the spices. The meatballs for the remaining cake are made from mackerel in tomato sauce, cooked for about an hour.
"Despite its large size, the dish still retains its delicious flavor thanks to being prepared in a short time before serving," Thanh shared.
Honoring Vietnamese cuisine and seafood ingredients
In addition to the filled loaves, the event also featured uniquely shaped loaves of bread, such as carp and crocodile, also measuring one meter in length. Each of these shaped loaves required about 5 kg of flour and took nearly 5 hours to shape and bake in a custom mold.

According to Chef Thanh, the show is an opportunity to introduce the richness and diversity of Vietnamese bread. At the same time, the event also aims to honor fish - a familiar, nutritious food source closely associated with the lives of Vietnamese fishermen.
