Science exonerates potatoes

New research has revealed that potatoes could completely transform the diet of people battling type 2 diabetes and could also improve heart health.

Potatoes, a food often "stigmatized" because of their carbohydrate content, turn out to be a rich source of nutrients that can improve blood sugar levels as well as reduce waist circumference.

Research led by Dr. Neda Akhavan, associate professor in the Department of Exercise Science and Nutrition, School of Integrative Health Sciences, University of Nevada Las Vegas (USA), has exonerated potatoes.

"Most people associate potatoes with fatty fries, we wanted to make it clear that potatoes, when prepared properly, are very healthy," says Dr Akhavan.

It's important to prepare potatoes in a healthy way, such as baking, air frying, sauteing with little oil, boiling or stewing.

The study included 24 type 2 diabetics. They were given baked potatoes as a snack or side dish every day, compared to a control group that was given an equivalent serving of white rice.

The study lasted for 12 weeks and the authors examined changes in participants' cardiometabolic health markers and glycemic control.

Surprisingly, the results found that those who ate potatoes had a slight decrease in fasting blood sugar levels, as well as a decrease in heart rate.

The results from the study provide evidence that potatoes can be healthily incorporated into the diabetic diet in place of foods with a high glycemic load, such as white rice, said Dr Akhavan, according to the Daily Mail.

In addition, the results also showed that eating potatoes is beneficial for the heart.

Dr Akhavan says it's important to prepare potatoes in a healthy way, such as baking, frying in an air fryer, sauteing with little oil, boiling or stewing, avoiding added fat.
