Every year, in the mountainous districts of Binh Dinh province, from around June to August is the time when there are many wasp pupae.
Besides those who specialize in hunting bee larvae for sale, many locals also hunt bee larvae to enjoy this delicacy.
For people in Phu My district (Binh Dinh province), there are many ways to process wasp pupae.
But besides wasp pupa porridge, stir-fried pupa with young banana in Phu My district (Binh Dinh province) is the most popular.
The way to process wasp pupae (young bees) in Phu My district is quite simple.
Wasp pupae, after being removed from the nest, are sorted into two types.
The first type is milky white bee pupae (no need to process).
The second type is the bee pupa, which is slightly yellowish in color, with a black line down the middle of its abdomen (this black part needs to be removed during preparation).
Choose young banana trees, remove the old outer leaves, slice thinly and soak in water with a little salt to prevent the banana leaves from turning black, then wash and drain.
Fry onion oil until fragrant, add thinly sliced banana stems (banana leaves) and stir-fry, season with regular spices to taste, finally add wasp pupae and stir-fry until cooked.
Stir-fried bee pupae with banana has a fatty, fragrant taste. Eating it with grilled rice paper and a bowl of chili garlic fish sauce will be more flavorful.
Currently, bee pupae are being sold in Binh Dinh province for approximately 450,000-500,000 VND per kilogram.
