- In recent times, the Xuat Le Agricultural Production and Service Cooperative, Ban Ranh Village, Xuat Le Commune, Cao Loc District, has focused on producing quality-assured yeast wine. Up to now, the cooperative's wine products have been recognized as 3-star OCOP products (One Commune One Product Program), thereby contributing to enhancing the value of traditional wine products.

Xuat Le is a border commune of Cao Loc district, people here have a traditional profession of making yeast wine, however, in the past, the product did not have its own brand, people only produced on a small scale to serve their families. From that reality, in 2020, Xuat Le Agricultural Production and Service Cooperative was established with 10 members to connect households with a tradition of making wine to increase the value of traditional wine products.

Ms. Vy Thi Bay, Director of the Cooperative, said: To produce traditional wine with guaranteed quality, the Cooperative has invested in building a factory on a scale of 500 m2 and divided it into separate areas and rooms such as: cooking rice, distilling wine, brewing wine, packaging... In particular, to improve the quality of traditional wine, the Cooperative focuses on selecting guaranteed raw materials. Accordingly, the rice used to make wine is locally grown bao thai rice. As for the yeast used to make wine, the Cooperative produces it itself according to the secret recipe of the Dao ethnic people in Xuat Le commune with many precious herbs, thereby creating a delicious flavor for the Cooperative's leaf yeast wine.

In addition, the cooperative also focuses on the stages of cooking rice and fermenting. After cooking, the rice is mixed with yeast and fermented for 20 days before distilling. The difference is that currently, the cooperative uses the traditional method of distilling alcohol, cooking with firewood and using a wooden distillation pot. Although the productivity of cooking alcohol by hand is lower than cooking with electricity, the quality of the alcohol will be fragrant, delicious and have a characteristic flavor. In addition, to improve the quality of traditional alcohol, the cooperative focuses on the water source for alcohol production. Accordingly, the cooperative uses pure spring water from 3 mountains: Cha mountain, Me mountain, Con mountain on Mau Son mountain top; the cooperative also invests in a filter to remove Andehit toxins. After distillation, the alcohol will be aged in a jar for 1 year and then put into a detoxification machine, then bottled and sold.

To build a brand in the market, the Cooperative also focuses on investing in packaging design and product design. Currently, the Cooperative has registered a brand for the product called "Tam Son Tuu" leaf yeast wine. The product is bottled, has full labels, traceability and has been registered for quality and food hygiene and safety inspection. From a traditional wine product that people previously only cooked for their families, the Cooperative's leaf yeast wine is now not only sold in the province but also consumed in many provinces and cities across the country such as: Hanoi , Hung Yen, Bac Ninh... On average, the Cooperative sells over 4,000 liters of wine to the market each year. With the quality affirmed through the product, the selling price has also increased compared to before the Cooperative was established. Currently, the Cooperative's leaf yeast wine is sold at 30,000 VND/liter (previously 25,000 VND/liter).

Mr. Tran Dinh Chien, Gia Thuy ward, Long Bien district, Hanoi city said: In recent years, through fairs held in Hanoi city, I learned about the yeast wine product of Xuat Le Agricultural Service Production and Trading Cooperative and bought it to try. I found that the yeast wine has a very unique delicious flavor, especially when drinking it is very smooth and does not cause headaches. Therefore, I ordered it as a gift, to use when having guests at home...

Mr. Nguyen Van Hanh, Head of the Department of Agriculture and Rural Development of Cao Loc district, said: The "Tam Son Tuu" yeast wine product of Xuat Le Agricultural Production and Service Cooperative is a product produced by hand, using traditional local yeast, so it has a delicious and characteristic flavor. The product is evaluated and classified as a 3-star OCOP product. In the coming time, the department and the People's Committee of Xuat Le commune will continue to support and create conditions for the Cooperative to introduce, display and promote its products at events and exhibitions in and outside the province.

With a production process that ensures food safety and hygiene, the yeast wine of Xuat Le Agricultural Production and Service Cooperative has gradually improved its quality, initially building its own brand. In the coming time, the Cooperative will continue to expand its production scale, improve the quality and design of its products to meet the needs of customers and gradually increase the income of its members.
