According to Dr. Huynh Tan Vu, Specialist Level 2 (Day Treatment Unit, University Medical Center of Ho Chi Minh City - Branch 3), candied fruit is a characteristic and indispensable dish during the traditional Vietnamese Lunar New Year. No matter how many years pass, the sweet and fragrant taste of candied fruit remains deeply ingrained in the hearts of every Vietnamese person.

With the natural colors of fruits and vegetables, each type of jam offers different sour, spicy, sweet, and savory flavors, symbolizing the five elements of the Five Elements of Heaven and Earth, which interact with each other, supporting and creating conditions for the development of all things. One type of jam that has become popular during Tet (Lunar New Year) in recent years is grapefruit peel jam, which is both delicious and beneficial to health.

Grapefruit is known to be a nutritious food rich in vitamins. However, most people only pay attention to the segments inside, and few know about the benefits of the grapefruit peel.

Grapefruit peel contains coumarin, carotenoids, and essential oils. It also contains pectin and a small amount of limonin. Below are some of the benefits of grapefruit peel jam.

How to make dried pomelo peel jam

Dr. Vu instructed that to make dried pomelo peel jam, you can use simple ingredients including the peel of 2 pomelos, a little salt, 140g of white granulated sugar, and 1 fresh lemon.

Remove the white pith from the grapefruit peel and cut it into bite-sized pieces. Soak the peel in warm water with a little salt. Then gently squeeze the peel for about 30 minutes.

Bring a pot of water to a boil, then add the grapefruit peel and blanch for about 5 minutes, or until it has a slightly bitter taste that's just right. Turn off the heat. Remove the peel and rinse it briefly with cold water, then drain.

Prepare the sugar syrup by ensuring a 1:1 ratio of sugar to grapefruit peel. Then, squeeze in 2-3 slices of lemon and soak the grapefruit peel in it for about 3-4 hours. Remove the peel, let it dry, and then sun-dry it for about 3 hours (this depends on the weather and the desired dryness and crispness of the jam).

Once the candied pomelo peel reaches the desired dryness, put it in a jar, seal it tightly, and you can enjoy it throughout the Tet holiday.
