What foods are at risk of salmonella contamination?

According to initial assessment, salmonella bacteria may be the cause of suspected food poisoning cases after eating bread in Ho Chi Minh City last week.

For nearly a week, 8 hospitals in Ho Chi Minh City have received cases of suspected food poisoning after eating bread.

According to the Ho Chi Minh City Department of Health , initially, clinical and paraclinical data of most patients with food poisoning after eating bread are consistent with intestinal bacteria, most likely salmonella bacteria.

Regarding salmonella bacteria, some domestic studies show that this bacteria has a high potential to cause disease and has acute gastrointestinal symptoms: abdominal pain, fever, diarrhea, vomiting. The incubation period is usually from 6 to 72 hours.

According to the World Health Organization (WHO), salmonella bacteria is one of the four main causes of diarrhea worldwide.

Salmonella bacteria are widely distributed in domestic and wild animals. They are common in poultry, pigs, cattle, and pets, including cats, dogs, birds, and reptiles.

Salmonella infection in humans is usually transmitted through the consumption of contaminated animal products (eggs, meat, poultry, and milk). Other foods, including vegetables contaminated with feces, have also been implicated in transmission.

Human-to-human transmission can also occur. Human infections also occur when individuals come into contact with infected animals, including pets. These infected animals often do not show symptoms of the disease.

Preventing salmonella infection requires control measures at every stage of the food chain, from production to processing; food production and preparation in both food businesses and at home.

Make sure food is cooked thoroughly; drink only pasteurized or boiled milk; avoid ice unless it is made from safe water.

When in doubt about the safety of drinking water, boil it. If boiling is not possible, disinfect the water with a disinfectant approved by the health authority.

Wash hands thoroughly and frequently with soap, especially after contact with pets or farm animals, or after using the toilet.

Wash fruits and vegetables thoroughly, especially if eating them raw. If possible, peel fruits and vegetables.

According to the WHO, the symptoms of salmonella infection are relatively mild. However, in some cases, especially in children and the elderly, dehydration can become severe and life-threatening.
