Que Son cassava noodle soup is a famous specialty of the Que Son region, made from cassava root.
This dish can be prepared in many ways, the most popular being mixed pho with ingredients such as meat, shrimp, herbs, and roasted peanuts; or pho soup cooked with snakehead fish or other meats. The chewy cassava noodles, made from local ingredients, are a simple, rustic yet very appealing dish.
Besides Que Son cassava pho, this year's Pho Day Festival brings together about 30 pho stalls from all over the country, each offering their own unique flavors such as: Pho Thin Bo Ho, H'Mong Pho from Ha Giang , roasted duck pho, Pho Ta, Pho Nho Pho Nui, Sam Ngoc Linh Pho, Minh Pasteur Pho, Pho's, Pho Tau Bay, Lac Hong Pho…

The festival space is designed in an open model, divided into 5 large areas: a commercial area, a pho stall area, a culinary experience area, an exhibition area, and a stage. Each area recreates a slice of the journey of Vietnamese pho, from ingredients, pho cooking secrets, pho eating methods to the role of pho in Vietnamese culture.
Over the two days of the festival, the organizers expect to serve approximately 20,000 bowls of pho at a uniform price of 40,000 VND per bowl.
The organizers will donate at least 10% of the pho sales revenue to the "Pho of Love" program, cooking and serving pho to people in the flood-stricken areas of Dak Lak province (formerly Phu Yen ), which recently suffered heavy damage from natural disasters.
Pho Day is an event initiated by Tuoi Tre Newspaper of Ho Chi Minh City, supported and coordinated for many years by the Department of Foreign Affairs and Cultural Diplomacy (Ministry of Foreign Affairs), the Department of Trade Promotion (Ministry of Industry and Trade), the Department of Industry and Trade of Ho Chi Minh City, and the Vietnam Culinary Culture Association, with the partnership of Acecook Vietnam Company.
