Recently, many videos of dishes made with marigold flowers have appeared on social media. Simply typing keywords like "marigold instant noodles" or "marigold chicken salad" will yield dozens of different videos.
Through short videos, many TikTok accounts showcase various ways to enjoy this dish, from mixing it into chicken salad to combining it with instant noodles, creating unique and appealing culinary experiences.
Interestingly, the videos show a rather simple preparation method: just pick the young flowers and leaves, wash them, put them in a bowl with instant noodles, and add boiling water to enjoy.
These videos, posted on social media, have attracted a huge amount of interaction from the online community and have sparked great curiosity about the taste and safety of this unusual dish. So, is eating marigold flowers safe?

Sharing his views on this matter, Associate Professor Dr. Nguyen Duy Thinh, former staff member of the Institute of Biotechnology and Food, Hanoi University of Science and Technology, stated that although marigolds have many benefits, they should be used in the correct dosage and according to a doctor's instructions. In particular, one should not use this flower as food without consulting a doctor.
Experts explain that marigolds are primarily grown for ornamental purposes. To keep the plants looking beautiful, growers may spray or inject them with pesticides, growth hormones, or other chemicals. Therefore, processing them would be harmful to health in general, increasing the risk of poisoning and posing many other potential risks.
"If you want to use chrysanthemums in cooking, you should choose home-grown, clean chrysanthemums that are safe for consumption, and you should only try them once and not overuse them," Mr. Thinh said.
People allergic to marigold components, pregnant women, people with a history of allergies, stomach problems, or cardiovascular disease should limit their consumption or consult a doctor before eating it.
Mr. Thinh advised that before cooking, it's best to blanch the food in boiling water to eliminate bacteria and reduce the pungent taste. Consume in moderation, avoid overconsumption, and combine with other foods like green vegetables and fruits to supplement vitamins and fiber.
