The name "Quang noodles" says it all, clearly indicating that this noodle dish originates from Quang Nam province, which was once part of the same province as Da Nang (Quang Nam - Da Nang). But exactly how did this golden-yellow noodle dish come into existence?

Quang noodles are not just a dish; they are a cultural icon. Served at family gatherings, ancestral commemorations, and Lunar New Year celebrations, this fragrant bowl of noodles has become one of the region's most beloved dishes. In Da Nang , people can enjoy Quang noodles for breakfast, lunch, dinner, or at any time of day.

The story of Quang noodles begins in Quang Nam province, home to the strategically important port city of Hoi An, which in the 16th century was a bustling trading hub connecting Vietnam with China and Japan. Chinese merchants arrived at the port and settled near Hoi An, bringing with them their culinary traditions, including egg noodles. Local people adapted these Chinese dishes to create Quang noodles: a distinctly Vietnamese noodle dish.

The word "noodles" originally referred to egg noodles, although Quang noodles developed from rice flour, a local staple food. By then, the name had become deeply ingrained in the region's culinary vocabulary, persisting despite the change in ingredients.

The noodle dish is served with ingredients such as shrimp, pork, chicken, or even fish or beef, all simmered in a turmeric-flavored broth. It's topped with fresh herbs, banana blossoms, peanuts, and grilled rice crackers, and finished with lime, chili, and optional toppings like quail eggs or pork cracklings. Some recipes even incorporate turmeric powder into the rice noodles, giving them a vibrant yellow color.

Many restaurants serve this signature dish in Da Nang, but here are some of the Michelin-starred Quang noodle restaurants that visitors absolutely must try.
