Michelin expert offers advice on elevating Vietnamese street food.

According to the Michelin Guide, a range of affordable Vietnamese street food dishes can be paired with European wines to elevate their flavor profile.

Vietnamese cuisine pairs well with fine Western wines.Banh Xeo (Vietnamese savory pancake) is one of the most popular street food snacks in Vietnam, made with simple, affordable ingredients like pork, shrimp, and bean sprouts. Wine expert Yu Yamamoto from the Michelin Sommelier Award-winning Lua restaurant recommends pairing banh xeo with Italian Prosecco. This sparkling wine enhances the crispy texture and deliciousness of the banh xeo. The ingredients of Vietnamese savory pancakes pair perfectly with Italian sparkling wine. Beef stew (Bò kho) is a dish originating from Saigon, often served with bread. With its distinctive flavors from lemongrass, star anise, and cinnamon, Mr. Yamamoto believes this dish would be especially suitable to enjoy with French Bordeaux BDX Merlot wine. BDX Merlot Bordeaux wine will elevate the flavor of beef stew served with bread.Beef pho: Few would imagine that beef pho – a traditional Vietnamese dish – pairs so well with wine. Some wines suggested by expert Yamamoto include sparkling Cava or Blanc de Blancs champagne. The subtle aroma of champagne enhances the sweet and savory flavor of the beef pho. However, diners should avoid wines with high tannin content, as these can cause astringency, spiciness, and bitterness, overpowering the delicate flavor of the pho broth. When pairing wine with pho, diners should choose a wine with low tannins to ensure a harmonious flavor.Shrimp and pork spring rolls: With fresh ingredients like raw vegetables, cucumber, and carrots, shrimp and pork spring rolls are a perfect pairing with a dry German white wine like Riesling. This wine, with its citrus and fresh herbal notes, is especially well-suited to spring rolls. Alternatively, diners can also try pairing them with other wines such as Austrian Gruner Veltliner or French Chablis. The fresh ingredients of spring rolls pair well with wines that have citrus and herbal notes.
