The cluster of Central Vietnamese food stalls entices diners with many delicious dishes, rich in Central Vietnamese flavors. The most prominent is the "Royal Salted Rice," a dish once considered a "royal tribute" in ancient times, renowned for its meticulous ingredient selection and distinctive flavor. Since the reign of Emperor Minh Mạng, it has been classified as a royal delicacy. Also a royal tribute dish, Quang Tri offers salt-cured Cua chicken, linked to the story of Cua chickens being offered to Emperor Ham Nghi. Quang Binh boasts Bo Chinh ginseng jam, also formerly a royal tribute, made from fresh Bo Chinh ginseng roots, a famous product of Bo Trach district and a valuable medicinal herb in traditional Eastern medicine.
The cluster of Southern Vietnamese food stalls captivated diners with rustic dishes reflecting the flavors of the Mekong Delta and the Southeast region; countless snacks and noodle dishes; delicious Saigon street food; delicacies from the fishing villages of Can Gio coastal area; cuisine from Cholon; and many seafood dishes originating from the southern seas and islands.
After a culinary feast, festival-goers have the opportunity to immerse themselves in a festive atmosphere rich in the folk culture of the three regions of Vietnam. At the Northern region area and the Cam Chuong restaurant, Quan Ho folk singing from Bac Ninh will be performed from 4 PM to 5 PM, 5 PM to 7 PM, and 7:45 PM to 8:30 PM. Then singing and Tinh lute playing will be performed by staff and employees (of the Tay ethnic group) from the Saigon - Ba Be and Saigon - Ban Gioc resorts at the highland market and parade area from 4 PM to 5:45 PM, 6 PM to 6:15 PM, and 7 PM to 8:30 PM. At the Central region area and parade area, Hue folk singing will be performed for the public from 4 PM to 5:30 PM, 6 PM to 6:15 PM, and 6:45 PM to 8:30 PM.
The art troupe from Bon Mat Pagoda in Soc Trang province will perform coconut shell dances, monkey dances, and Khmer five-tone music – a national intangible cultural heritage – from 4 PM to 5:45 PM, 6 PM to 7 PM, 7 PM to 7:45 PM, and 8 PM to 8:30 PM at the entrance gate and Cam Chuong restaurant, touring the southern area where traditional folk music and modern-style performances will also take place from 4 PM to 5:45 PM, 6 PM to 6:15 PM, and 6:30 PM to 8:30 PM. Phuc Hau Circus, featuring clowns on stilts and juggling, will perform at the entrance gate and throughout the festival from 6 PM to 6:30 PM and 7 PM to 7:30 PM. Street Cai Luong (Vietnamese traditional opera) performances will be held in the coffee shop area and parade area from 5 PM to 6 PM and 6 PM to 6 PM. From 15:00 to 18:45 - 20:00, from 16:30 to 18:30 at Trang Do restaurant, there will be performances of traditional musical instruments, and from 19:15 to 19:45, Thai Xoe dance will be performed at the highland market.
For those who enjoy testing their skills, don't forget to visit the traditional craft village area with over 50 types of cakes and pastries.
