When talking about Van Ninh district, Khanh Hoa province, many people immediately think of famous products that are popular in domestic and foreign markets such as: steamed fish cakes, fried fish cakes or agarwood.

Hai Xiu fish cake facility of Mr. Tran Thanh Hai's household (Tan Dan 2 village, Van Thang commune, Van Ninh district, Khanh Hoa) has been established and developed for decades.

While struggling to import fish ingredients from the sea, Mr. Tran Thanh Hai said: "My family has been making fish cakes for over 20 years, the main products are fried fish cakes and steamed fish cakes. However, fried fish cakes are more popular with consumers."

Mr. Hai shared: "The family's fish cake product has met the 3-star OCOP (local strength product) standard, and the family is striving to achieve 4 stars. To make fish cake products, it must go through many stages: cutting fish, cleaning, rubbing with salt, separating bones, mixing fuel, mashing fish, and steaming or frying.

If you want delicious fish cakes, the fish cake ingredients must be fresh. This is considered one of the most important steps.

According to Mr. Hai, fried or steamed fish cakes have the same size, about 22cm in diameter and weigh 0.5kg/product.

The main types of fish used to make fish cakes are barracuda, red snapper, and anchovy. His family's fish cakes have been supplied to many provinces and cities across the country.

A representative of the Farmers' Association of Van Thang commune (Van Ninh district, Khanh Hoa province) said that the Hai Xiu fish cake facility has been invested in quite systematically with an area of about 2,000 square meters. The facility has created jobs for more than 100 local workers to earn extra income.

The owner of the facility has boldly applied science and technology and machinery to replace manual labor, thanks to which productivity has increased significantly. After deducting expenses, the facility has a profit of 1.7 billion VND/year.

The leader of the Economic Department of Van Ninh district said that in recent times, the locality has always actively guided and trained units to implement the OCOP program. At the same time, it has promoted propaganda to raise awareness about the OCOP program.

Up to now, the whole Van Ninh district has had 13 products recognized by Khanh Hoa Provincial People's Committee as 3-star OCOP products of 9 entities. Particularly, fish cakes have 3 establishments recognized as 3-star OCOP including: Pham Thi Thuan fish cakes, Nguyen Trang Thuy Diem fish cakes and Hai Xiu fish cakes.
