Having been involved in the culinary profession since 2020, after researching, Mr. Huynh Van Sy decided to choose bamboo rice and grilled chicken as the main dishes of the store.
For him, bamboo rice and grilled chicken are not only dishes but also contain stories about the culture of the Jrai and Bahnar ethnic groups in the Tay Gia Lai region. Therefore, he always strives to become a good chef to convey that "cultural story" to everyone through cuisine.

Mr. Sy shared: Bamboo rice and grilled chicken are traditional dishes of ethnic minorities in the past during their trips to the forest and fields. The rustic, simple flavor imbued with the nature of the mountains and forests needs to be preserved and promoted.
"In addition to the main facility in Pleiku ward, I also expanded the bamboo rice and grilled chicken facility in Bien Hoa ward ( Dong Nai province). Receiving the response from diners from all over, I boldly brought bamboo rice and grilled chicken to the sea right after Gia Lai (old) and Binh Dinh merged into the new Gia Lai province" - Mr. Sy said.
Although bamboo rice and grilled chicken are no longer strange to everyone, to bring out the unique flavors of Central Highlands cuisine, Mr. Sy must truly understand and put all his heart into it.

Mr. Sy chose to locate his bamboo rice and grilled chicken establishment at 491 Hoang Van Thu (Le Hong Phong Ward). In just a short time of "catching the rhythm", the flavor of bamboo rice and grilled chicken prepared by him has created an attraction for the people and tourists of the coastal area.
According to Mr. Sy, no matter where he brings the traditional dish of bamboo rice and grilled chicken, he still keeps the original recipe. Bamboo rice must have the sweet aroma of rice; the chicken must be grilled over just the right heat so that the meat is cooked deliciously and has a rich flavor.
“Com lam must be cooked from good sticky rice. The bamboo tubes used are green, fresh, thin and long-jointed. For grilled chicken, choose free-range chicken weighing about 1.2-1.5 kg, marinate according to traditional recipes and use the “fire-grilling” technique to ensure the chicken skin is crispy while the meat inside is not dry. In particular, to make the dish more delicious, I prepare the accompanying dipping sauce with perilla leaf salt. I get all of these ingredients from gardeners in the Western Gia Lai region,” said Mr. Sy.

In the early days when bamboo rice and grilled chicken appeared at the beginning of the alley, Ms. Vo Thi Bich Hien (Le Hong Phong ward) was quite curious. Born and raised in a coastal city, she had never enjoyed this dish.
Ms. Hien expressed: “I was very excited to witness the preparation of bamboo rice and grilled chicken. It is really elaborate and attractive. After enjoying it a few times, my family and I really like this flavor. The rice and chicken are both delicious and flavorful. I have introduced it to friends, relatives and tourists from near and far when they come to visit and experience the coastal city.”
Similarly, Ms. Ho Thi Cam Quyen (Ngo May ward) was also very surprised to enjoy bamboo rice and grilled chicken right in the coastal city of Quy Nhon without having to go far.
“Before, every time I traveled to some areas in the Central Highlands, I often ate bamboo rice and grilled chicken. But from now on, I can find the right taste of traditional bamboo rice and grilled chicken in the heart of the coastal city. From bamboo rice, grilled chicken to the dipping sauces, they are really attractive. It is easy to understand why tourists quickly come here to enjoy them,” said Ms. Quyen.

Currently, Mr. Sy's establishment serves hundreds of diners every day. He is delighted that this traditional dish is enthusiastically welcomed by locals and tourists from all over the world.
