The journey of Nhân Đức vermicelli in conquering the market.

Phu Yen - Son La, a land of lush green hills, clear streams, and vigorous vegetation, is home to ethnic minority communities who have lived by agriculture for centuries. The warm climate, rich soil, and fertile land have created favorable conditions for growing ginger, a crop with high economic value and a stable source of income for the local people.

Made from precious natural ingredients like arrowroot, the story of Nhan Duc arrowroot vermicelli begins with the passion and compassion of its founder. Since 1985, Mr. Dinh Van Nhan, the owner of Nhan Duc arrowroot vermicelli production facility, has dedicated much time to researching, learning the processing techniques, and investing in arrowroot vermicelli production. Driven by a desire to inherit the tradition from his ancestors, the Nhan Duc arrowroot vermicelli production facility officially opened in 2015 in Chai village, Huy Thuong commune, Phu Yen district, Son La province .

The production process of cassava vermicelli at Nhan Duc vermicelli facility begins with planting cassava tubers in January and February each year. The cassava tubers are grown in fertile, lush soil on high hills often covered in fog. The planting process then continues until September and October when the plants are ready for harvest. All steps in the Nhan Duc vermicelli production process adhere to a closed-loop system, always ensuring compliance with food safety and hygiene requirements.

First, the main ingredient is arrowroot tubers collected from local farms. The tubers are carefully selected to ensure the best quality before being washed thoroughly by machine. Then, the arrowroot tubers are put into a grinding machine to extract the starch. This process is carried out meticulously to ensure only the highest quality starch is extracted. The starch mixture, after being extracted from the grinding machine, is repeatedly stirred in clean water until the water becomes clear before settling to separate the starch. The starch is then mixed with boiling water until cooked and then pressed into vermicelli noodles. The noodles are then sun-dried until completely dry. After sun-drying, the dried vermicelli is collected and bundled into batches, then packaged and ready for market distribution.

Mr. Dinh Van Nhan said: “ Previously, my family mainly bought cassava tubers from local people and processed the cassava starch to supply cassava vermicelli production facilities in the lowlands, but the economic efficiency was not high. Concerned about this, in 2014, I decided to learn and understand the cassava vermicelli production process from traditional craft villages, and purchased modern machinery for cassava vermicelli production. In 2015, I established Nhan Duc Cassava Vermicelli Production Facility, investing in a factory, machinery, and equipment; renting land to grow raw materials and signing contracts and commitments to purchase cassava from people in the commune, especially focusing on investing in ethnic minority households.”

This product is not only famous for its rich flavor, chewy texture, and natural color, but also offers many health benefits. Made from starch, vermicelli is cooling and rich in nutrients, helping to control blood sugar levels and support the treatment of diabetes. In particular, the distinctive aroma of vermicelli from the mountains of Northwest Vietnam will leave a lasting impression.
