From pure green beans, through the skillful hands of Dai Dong villagers, sweet soup is not only a traditional gift for every holiday and Tet, but also becomes a symbol of community connection and pride of the people of Xu Doai.
Currently, the entire Thach That commune has more than 40 households following the profession, producing hundreds of tons of dried tea each year. Many establishments have proactively upgraded their products through the One Commune One Product (OCOP) Program, in which many products have achieved 3-star and 4-star OCOP certification, affirming the brand of local specialties and being favored by many consumers.
Bang An traditional confectionery production facility is one of the bright spots with Dai Dong sweet rice cake products with beautiful designs and unique flavors. The delicate combination of traditional flavors and modern designs has helped the product both preserve the soul of the countryside and create attraction in the traditional gift and culinary market.
Ms. Kieu Thi Thu Ha, representative of Bang An production facility, shared: “For us, preserving traditional flavors is the core. Although the product has been innovated to suit the taste, the sweet taste and natural aroma of green beans are still preserved intact. It is not only the taste, but also the memory and identity of Dai Dong countryside.”
The characteristic of Dai Dong sweet soup is its compact, delicate form, imbued with traditional cultural imprints. The surface of the cake is shaped like a lotus flower or bamboo tree - symbols of elegance and purity in Vietnamese culture. When enjoyed, the cake has a mild sweetness and a strong aroma of pure green beans.
As a long-time employee, Mr. Kieu The Luong - owner of Quy Tru dried tea facility - said: "Compared to before, the younger generation in the village has boldly applied technology and invested in modern machinery. Thanks to that, productivity has increased, cooking time has been shortened, avoiding burning while still retaining the traditional flavor, ensuring food hygiene and safety."
From these innovations, it can be seen that Dai Dong sweet soup not only contributes to enriching Hanoi's culinary map, but is also a vivid proof of the harmony between traditional values and modern consumption trends...
