Chef Ryan presented three dishes: smoked chicken, braised pork trotters with pickled shallots and young mangoes, and skewered fish sauce hotpot. Regarding the smoked chicken, Chef Ryan shared that he combined various aromatic ingredients from sugarcane, lemongrass, sliced lime leaves, jasmine tea, etc.; using a method of steaming the chicken in a clay pot, applying heat to the chicken to ensure the meat is tender but still retains its crispness and sweetness. The chicken is smoked for about an hour, using only heat to affect the ingredients, without using any water. This dish is served with sticky rice cooked in chicken fat, with added coconut milk and pandan leaves for extra richness and aroma.
With his skewered fish sauce hot pot, Chef Ryan creatively skewers the ingredients onto sticks to offer diners a new culinary experience. He also shared his secret to making delicious fish sauce hot pot, explaining that a combination of fermented snakehead fish sauce and fermented catfish sauce is essential for a flavorful broth.
