A large genetic study recently published in the scientific journal npj Science of Food has yielded an important finding. According to the medical news website News Medical, for coffee drinkers, the brewing method plays a crucial role in blood sugar control.

They analyzed genetic data from the UK Biobank and from 18,000 participants in the international study on gut microbiota called the MiBioGen consortium.
The authors analyzed various ways of drinking coffee, including filter coffee, instant coffee, and coffee with added sugar or milk. These methods of coffee consumption were evaluated based on four genera of propionic acid-producing gut bacteria: Akkermansia, Bifidobacterium, Parabacteroides, and Veillonella.
Black filter coffee without sugar helps lower blood sugar.
The results revealed that among the six types of coffee consumption tested, only unsweetened, filter-brewed black coffee was effective in reducing HbA1c levels. The other types of coffee did not have this effect.
Researchers explain that filtered coffee achieves this because it increases the levels of Veillonella bacteria, which are known to lower HbA1c levels. Intermediate analysis showed that Veillonella bacteria accounted for 43.33% of the glycemic benefit of filtered coffee.
The results also showed that adding sugar negated this effect of filtered coffee.
Researchers explain that the filtration process is crucial because it removes diterpenes while retaining chlorogenic acid and polyphenols—compounds that promote favorable conditions for Veillonella bacteria, which enhance insulin sensitivity.
The way coffee is brewed is very important for metabolism. Researchers suggest prioritizing black, filter-brewed coffee without sugar as a simple way to improve blood sugar control, according to News Medical.
